Tequila is a distilled beverage made from the blue agave plant, primarily in the area surrounding the city of Tequila in the state of Jalisco, Mexico. Mexican laws state that tequila can only be produced in the state of Jalisco and limited regions in the states of Guanajuato, Michoacán, Nayarit, and Tamaulipas. The blue agave plant takes several years to mature before it is harvested, cooked, fermented, and then distilled. Tequila is commonly consumed neat, in shots, or mixed into cocktails. There are different types of tequila depending on the aging process, including blanco (unaged), reposado (aged for a period between three months and a year), and añejo (aged for one to three years). It is a popular ingredient in many cocktails, such as margaritas, palomas, and tequila sunrises.
