Alcohol-free tiramisu
Espresso-and-vanilla tiramisu without Marsala, rum, or liqueur, with mascarpone/rennet and cocoa checks.

Why Halal checks matter here
Classic recipes soak sponge in Marsala or rum; mascarpone tracks cheese/rennet; chocolate dusting is usually fine but flavoured cocoas need a label check.
Halal-critical ingredients
- Soak: Marsala, rum, and liqueur are intoxicants added as ingredients. Coffee, sugar, and alcohol-free vanilla only. See Wine and Rum.
- Mascarpone: Italian cream cheese can use animal rennet. Read the tub; choose microbial/Halal-certified, or a mascarpone alternative your practice accepts.
- Cocoa / chocolate: Plain cocoa is usually plant-based; drinking-chocolate mixes may add emulsifiers or flavourings. Use unsweetened cocoa. See Cocoa.
Ingredients
Coffee soak (no spirits)
- 250 ml (1 cup) freshly brewed espresso or strong filter coffee, cooled
- 20 g (1½ tbsp) caster sugar, in the coffee
- 5 ml (1 tsp) alcohol-free vanilla (bean paste or glycerine-based)
Mascarpone cream
- 80 g (4 yolks) egg yolks
- 80 g (6 tbsp) caster sugar
- 500 g (2 cups) mascarpone with named microbial/vegetable/Halal-certified coagulant
- 120 g (4 whites) egg whites, whipped to soft peaks (optional, for a lighter set)
Assembly
- 200 g (about 24 fingers) savoiardi / sponge fingers (flour, sugar, egg — check the pack)
- 15 g (2 tbsp) unsweetened cocoa powder, for dusting
Method
- Brew a non-alcoholic soak. Dissolve sugar in hot espresso, cool to room temperature, then stir in alcohol-free vanilla. Do not add Marsala, rum, brandy, or coffee liqueur. A splash of extra espresso is the flavour path, not ‘cooking off’ wine.
- Yolk foam. Whisk yolks and sugar over a pan of barely simmering water until thick, pale, and about 70 °C (a zabaglione-style sabayon). Take off the heat. This is the classic tiramisu cream base; the alcohol is simply omitted.
- Fold mascarpone. Beat cold mascarpone until smooth, then fold in the yolk foam. If using whites, fold them in last. Use mascarpone that names microbial, vegetable, or Halal-certified enzymes; unnamed ‘cheese cultures’ on cheap tubs are a rennet question — see Cheese.
- Dip, do not drown. Dip each sponge finger in the coffee for 1–2 seconds a side. They should be moist, not collapsing. Layer fingers and cream in a 20 × 20 cm dish (two layers of each).
- Cocoa and chill. Dust the top with cocoa through a sieve. Avoid ‘mocha mix’ powders that list alcohol flavouring. Chill at least 4 hours, preferably overnight, so the cream sets.
