Why Halal checks matter here

Classic Genovese pesto uses Parmigiano and/or pecorino, which are rennet-conditional; jarred pesto hides cheese type; restaurant pasta may be finished with wine.

Method

  1. Pound or pulse. Crush garlic and salt, then pine nuts, then basil, streaming in oil to a thick sauce. A processor is fine; do not heat the basil. Cheese, if using, goes in last. Cheese-free pesto is Halal on ingredients; classic pesto is only as clear as the cheese. See Pesto, Cheese, and Rennet.
  2. Pasta. Boil pasta in salted water. Reserve starchy water. Do not finish the pan with wine.
  3. Loosen, do not cook the sauce. Toss drained pasta with pesto off the heat, adding spoonfuls of pasta water until it coats. Boiling pesto turns basil dull and is unnecessary.
  4. Jars are a different product. If you ever use jarred pesto instead, read cheese type, whey, and flavourings. This recipe is the home baseline.
