Halal Swedish-style meatballs

Why Halal checks matter here
Traditional Swedish köttbullar often mix pork and beef; frying fat may be lard; some cream sauces use wine.
Halal-critical ingredients
- Pork in the mix: Many traditional and supermarket mixes are pork-and-beef. Halal beef plus lamb (or all beef) from Halal slaughter.
- Frying fat: Lard is pork fat. Butter, ghee, or vegetable oil. See Lard.
- Sauce: Wine in some cream gravies. Stock and cream only.
Ingredients
Meatballs
- 400 g (14 oz) Halal-slaughtered beef mince
- 200 g (7 oz) Halal-slaughtered lamb mince (not pork)
- 50 g (1 cup) fresh breadcrumbs
- 80 ml (⅓ cup) milk
- 80 g (½ medium) onion, very finely grated
- 50 g (1 large) egg
- 2 g (1 tsp) ground allspice
- 1 g (¼ tsp) ground nutmeg
- 8 g (1¼ tsp) fine salt
- 2 g (½ tsp) black pepper
Pan sauce
- 30 g (2 tbsp) unsalted butter or sunflower oil (not lard)
- 20 g (2 tbsp) plain flour
- 350 ml (1½ cups) Halal beef stock
- 100 ml (scant ½ cup) double cream
- 10 ml (2 tsp) soy sauce without added alcohol, optional, for colour
To serve
- 800 g (4 servings) mashed potato
- 80 g (⅓ cup) lingonberry jam or cranberry sauce without alcohol
Method
- Soak crumbs. Soak breadcrumbs in milk 10 minutes. Mix with onion, egg, allspice, nutmeg, salt, and pepper, then the Halal beef and lamb. Do not add pork. Rest 15 minutes so the mix hydrates.
- Shape and fry. Roll 24 balls of about 25 g. Fry in butter or oil over medium heat until browned and cooked through, 8–10 minutes. Do not fry in lard or leftover pork fat.
- Sauce without wine. In the same pan, cook flour in the remaining fat 1 minute. Whisk in Halal stock, simmer 3 minutes, then cream. Optional soy for colour — read the bottle. No wine, brandy, or Madeira.
- Serve. Meatballs, sauce, mash, and lingonberry. Shop IKEA-style mixes and restaurant plates still need their own meat check — see Swedish meatballs.
