  1. Clear stock. Blanch bones, rinse, then simmer with water, garlic, and spring onion 45 minutes. Skim. The stock must be Halal beef, not pork or mixed street-cart bones. Strain and season with salt.
  2. Springy paste. Pulse chilled beef with salt, garlic, and pepper. Add tapioca and ice water a little at a time and mix until sticky and bouncy (several minutes in a stand mixer with the paddle, or a food processor). Ice keeps fat solid so the balls stay smooth — a standard bakso control.
  3. Shape and poach. With wet hands, squeeze 25–30 g balls. Poach in barely simmering (not rolling) broth until they float and are cooked through, about 8–10 minutes. Do not boil hard or they toughen.
  4. Noodles and sauces. Cook noodles separately. Sweet soy (kecap manis) is usually sugar, soy, and spices — still read for alcohol or unspecified flavourings. Sambal is typically chillies; meat sambals exist, so use a chilli-only paste. See Soy sauce.
  5. Assemble. Noodles, three to five meatballs, hot broth, fried shallots, chilli, and a spoon of verified sweet soy. This does not certify a warung bowl abroad.
