Why this ruling
Red Rooster is an Australian roast-chicken chain. Its FAQ answers the Halal question for the menu and, separately, for the restaurants.
The certified menu
Red Rooster says: "our chicken is Halal certified", prepared as "prescribed by Muslim law, from our suppliers". That covers whole chickens, tenders, fried chicken, buttermilk wings, buttermilk pops and nuggets. It goes further than most chains: "our signature gravy and chips are also Halal certified".[1]
Not a certified restaurant
The same answer stops short of the kitchen. Red Rooster has "procedures in place to ensure separation", but "can't say our restaurants are technically Halal certified", because it can't fully guarantee no cross-contamination with non-Halal products.[1] Items it doesn't name, such as burgers, wraps and sauces, aren't covered by the statement, so ask.
For another Australian chicken chain, see Oporto; for supermarket chicken, see Lilydale.

Why isn't Red Rooster a Halal-certified restaurant?
Scholarly view
Certified chicken settles the slaughter question, and Red Rooster extends the certificate to its chips and gravy, which is unusual. What it won't promise is the kitchen: it calls its restaurants not 'technically' Halal-certified because it can't fully rule out cross-contamination.
Muslims who accept certified food from a mixed kitchen will be comfortable with the named items; those who need a certified restaurant will not find one here.

'At Red Rooster, our chicken is Halal certified. Their preparation is prescribed by Muslim law, from our suppliers. This includes Whole Chickens, Tenders, Fried Chicken, Buttermilk Wings, Buttermilk Pops and Nuggets. Our signature gravy and chips are also Halal certified. We also have procedures in place to ensure separation and correct handling occurs, but we can't say our restaurants are technically Halal certified. That's because we can't 100% guarantee that no cross contamination has not occurred between our chicken and non-Halal products during the cooking and preparation process.'
