Is Agave Syrup Halal?

Agave syrup, often sold as agave nectar, is a sweetener made from the agave plant of Mexico, the same family of plants that tequila is made from. The sugary juice of the plant's core is filtered and heated or treated with enzymes, which breaks its starches down into a syrup that is mostly fructose. It is a plant product, and it is Halal.^[2][1]

Light, amber and dark

Agave syrup is sold in grades from light, with a neutral taste, to dark, with a caramel flavour. The darker ones are less filtered. All are the same product; none contains alcohol.^[3]

Agave syrup and tequila

The plant is the same, but the products are not:

• Agave syrup is the plant's juice turned into a syrup. No fermentation, no alcohol. Halal.
• Tequila and mezcal are made by fermenting agave juice into an alcoholic liquid and then distilling it. They are intoxicants and Haram; see tequila.

A margarita "with agave" in a bar uses agave syrup as the sweetener, but the drink itself is built on tequila.

Where you will find it

• vegan baking and breakfast cereals, as a honey substitute,
• cold drinks and iced coffee, because it dissolves easily,
• cereal bars, granola and "no refined sugar" snacks.

Because it is very high in fructose, it is sweet but not a health food; that is a nutrition question, not a Halal one.
