Why this ruling
Gazpacho is Andalusia's cold summer soup: ripe tomatoes, cucumber, green pepper, garlic and a piece of stale bread, blended with olive oil, vinegar and salt, chilled and served in a bowl or a glass. It is raw, refreshing and almost entirely plant-based.[3][1]

The vinegar is the only ingredient to think about. Andalusian recipes traditionally use sherry vinegar, and many cartons use wine vinegar. Wine vinegar has its own page because scholars treat it differently; if you prefer to avoid it, make or buy gazpacho with apple or spirit vinegar, or lemon juice.
Its relatives
- Salmorejo, from Córdoba, is thicker, made of tomato, bread, garlic and olive oil, and usually topped with chopped egg and jamón, cured pork ham. Ask for it without the ham; see ham.[2]
- Ajoblanco, from Málaga, is a white cold soup of almonds, garlic, bread and olive oil, often served with grapes. It is plant-based.

Supermarket gazpacho in Spain and elsewhere lists its ingredients: vegetables, olive oil, bread, vinegar and salt. The label will say which vinegar. There is normally no meat, stock or dairy.
