Authentic paella valenciana is built on chicken, rabbit, beans, saffron, and often snails—not seafood and not pork.[1][2] Seafood paella is a separate coastal plate. Tourist mixed pans frequently add chorizo or other pork, which makes that pan Haram.[3]
Chicken, rabbit, or duck still need Halal slaughter. Ask what the stock is and whether the same pan fried pork earlier. Socarrat (the toasted crust) is a cooking result, not a Halal mark. Land snails and shellfish follow your school.
If the kitchen cannot name the meat and fat, skip it. A vegetable or verified seafood paella (per your shellfish practice) is the realistic alternative when Halal land meat is not on offer.
