Why this ruling

West Sumatran cooks reduce coconut milk with galangal, chilli, and lemongrass until the sauce clings to the meat—that dry curry is rendang, usually beef, often chicken.[1] The spices are plant; Halal slaughter still decides, and pork rendang is Haram.[2]

In Malaysia a JAKIM mark helps for that stall or pack.[3] A Muslim Minang or Malay kitchen is everyday Halal food. An overseas restaurant pot is unverified until the meat is named. Coconut and lemongrass do not certify slaughter.
