Why this ruling
Yeast is a single-celled fungus, not an animal, and food yeast is Halal.[2] The yeast in your bread, the flakes sprinkled on pasta and the dried brewer's yeast sold in health shops are all permissible foods.[1]
The kinds you will buy
- Baker's yeast – Saccharomyces cerevisiae, sold fresh (compressed blocks), as active dried granules or as fast-action instant yeast. Commercial yeast is grown on sugar-beet or cane molasses with mineral nutrients.
- Nutritional yeast – the same organism, deactivated by heat and dried into yellow flakes; often fortified with vitamin B12 and used as a cheesy seasoning.
- Brewer's yeast – recovered from beer brewing, then washed, deactivated and dried for sale as a supplement.
- Sourdough starter – wild yeasts and bacteria from flour and air, kept alive at home.
Fermentation is not the same as alcohol
Yeast makes carbon dioxide and a small amount of alcohol when it ferments sugar. In bread, that is what makes the dough rise, and the heat of the oven drives the alcohol off: bread is Halal. In beer and wine, the alcohol is the point of the drink, and those drinks remain Haram whatever yeast made them. Buying baker's yeast, or eating bread, does not make an intoxicating drink permissible, and the permissibility of yeast does not depend on how the drink it came from is judged.
