Why this ruling

Smørrebrød – "butter and bread" – is Denmark's lunchtime open sandwich: a thin slice of dense, dark rye bread (rugbrød) spread with butter and piled with a topping, eaten with a knife and fork. Lunch restaurants in Copenhagen offer dozens, and they are served in a set order: herring first, then other fish, then meat, then cheese. Whether yours is Halal depends entirely on the topping.[2][1]

The classic toppings

Topping What it is Halal?
Pickled herring (sild) Herring marinated in vinegar, sugar and spices Yes
Smoked or cured salmon, gravlax Fish Yes; see gravlax
Egg and prawns (æg og rejer) Boiled egg, prawns, mayonnaise Yes for most scholars; see shrimp
Fried fish fillet with remoulade Plaice, breaded Yes; ask about the frying oil
New potato (kartoffelmad) Potatoes, chives, mayonnaise Yes
Cheese Aged Danish cheese Usually; see cheese
Liver pâté (leverpostej) Pork liver and pork fat No
Roast pork (flæskesteg), ham Pork No
Meatballs (frikadeller) Usually pork No
Roast beef (roastbeef) Beef with remoulade and crispy onions Only from Halal slaughter

The bread and butter

Danish rye bread is sourdough rye, grains and seeds, with no animal ingredient. Butter is dairy. Neither needs a check.

Drinks at the table

A traditional smørrebrød lunch often comes with snaps (aquavit) and beer, which are not Halal. The food itself does not contain them.

Ordering

Choose fish, egg, potato or cheese smørrebrød, and ask what is in any pâté or meatball. For Scandinavian food in general, see the Scandinavia guide, and for salmon, salmon.

Frequently asked questions

Is smørrebrød Halal?
It depends on the topping. Rye bread, butter, herring, salmon, egg and cheese toppings are Halal; liver pâté, roast pork, frikadeller and ham are pork.
Is Danish liver pâté pork?
Yes. Leverpostej is usually made from pork liver and pork fat. It is one of the most common smørrebrød toppings, so ask before ordering a mixed plate.
Is herring smørrebrød Halal?
The herring is fish. Pickled herring is cured in vinegar, sugar and spices; some marinades add snaps or sherry, so ask.
What are frikadeller?
Danish meatballs, traditionally made from pork mince, sometimes mixed with veal. Do not assume they are beef.

Scholarly view

Rye bread, butter, fish, egg and vegetables are Halal. Pork toppings are Haram, and beef toppings need Islamic slaughter.
