Spätzle are the soft, irregular egg noodles of Swabia in south-west Germany, and of Bavaria, Austria and Switzerland. A thick batter of flour, eggs, salt and water is scraped from a board or pressed through a sieve straight into boiling water, and the little dumplings are done when they float.[3] Plain spätzle have no animal ingredient except egg, so they are Halal. What they are served with decides the plate.[1]

Käsespätzle

Swabia's "cheese spätzle" layer the noodles with grated Emmental or Bergkäse, then top them with onions fried crisp. Traditional Alpine cheeses are usually made with animal rennet. The onions may be fried in butter or in lard, so ask.[2]
