Why this ruling
Sheftalia are small, plump grilled sausages from Cyprus, made without a casing. Minced pork, sometimes mixed with lamb, is seasoned with onion, parsley and black pepper, then wrapped in caul fat, the thin, lacy membrane of fat from around an animal's stomach, and grilled slowly over charcoal until the fat melts into the meat. They are eaten in a pitta with tomato, cucumber, onion, parsley and lemon, or as part of a grilled meze.[2][1]

In the Greek Cypriot recipe, both the mince and the caul that holds it together are pork.[3] Some cooks mix lamb into the mince or use lamb's caul, but the pork in the mix still decides it, and once grilled the two cannot be told apart. So a sheftalia from a taverna, a souvlaki shop or a meze platter is treated as pork unless the cook says otherwise.
Şeftali kebabı in the north
Turkish Cypriots make the same little parcel as şeftali kebabı, usually from lamb or beef mince wrapped in sheep's caul fat. That changes the question: from Halal meat, it can be Halal. Ask what the mince is, where the caul comes from and whether the meat is Halal. In the south, and in Cypriot restaurants in London, Melbourne or elsewhere, assume the classic pork version.
What to order instead
